I was at uni for both lunch and dinner yesterday, so I had to pack a lot of filling food into a small box!
Top tier: two onigiri balls, filled with curried soy “meat”, and lightly cooked in the curry sauce, in a bed of rocket and baby spinach, with carrot and avocado paste as a sort of side salad.
Bottom tier: arborio rice with more soy “meat”, uncooked soy beans, carrot, snowpeas, and splashed with Bragg’s Liquid Aminos (yes, I found some in Australia!).
I also took a snack box, containing one of my Triple Berry and White Choc Chip Muffins that I made earlier in the week, celery sticks, whole snowpea pods, and a small container of sunflower seeds and raw almonds. Plus a small box of roasted chickpeas in with spicy tomato seasoning.
