Vegan Gluten-free Blondie-Brownie Bars

Makes 16 brownies. Gluten free and vegan.

Ingredients:

For the brownie layer:

  • 125g dark chocolate, roughly chopped
  • 1/3 cup (canola) oil
  • Egg replacer for 2 eggs; I use Orgran No-Egg.
  • 2/3 cups raw (granulated) sugar
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 cup gluten free flour (I used brown rice flour for these, and the texture is amazing. Orgran do a good general purpose flour too)

For the blondie layer:

  • 125g white chocolate, roughly chopped
  • 1/3 cup (canola) oil
  • Egg replacer for 2 eggs
  • 2/3 cups raw (granulated) sugar
  • 2 tsps vanilla extract
  • 1 tsp baking powder
  • 1 cup gluten free flour

Steps:

  1. Preheat the oven to 180 Celsius, and line a 9″ square baking tray with baking paper.
  2. In a small saucepan, melt the dark chocolate and 1/3 cup canola oil over a low heat, stirring often – don’t burn it!
  3. In a large mixing bowl, combine egg replacer for two eggs, 2/3 cup sugar and 1 tsp vanilla extract until combined.
  4. Stir in melted chocolate and blend well.
  5. Stir in 1 cup flour and 1 tsp baking powder, and blend well.
  6. Pour the mixture into the baking pan, and use wet hands to press it down evenly. Place in fridge.
  7. Melt the white chocolate and 1/3 cup canola oil over low heat, stirring often.
  8. In a large mixing bowl, combine egg replacer for two eggs, 2/3 cup sugar and 2 tsp (or more!) vanilla extract until combined.
  9. Stir in melted chocolate and blend well.
  10. Stir in 1 cup flour and 1 tsp baking powder, and blend well.
  11. Pour the batter over the dark chocolate layer, and press flat with damp hands.
  12. Bake for approximately 25 minutes, or until the top is slightly browned at the edges and shrinking away from the pan.

  3. Awesome! If you want to make them extra-decadent, grate some “milk” chocolate to cover the bottom layer before you add the top white layer. It’s amaaaaaaazing. 😉
